About the Author

Born in Mexico, Margarita Carrillo Arronte has dedicated more than 25 years to researching, studying, teaching and cooking Mexican cuisine. From 1996 to 2006, she was the Mexican Ministry of Agriculture’s chef and organized Mexican food festivals and gala dinners across North America, Europe and Asia. In 2010, she led a campaign to get Mexican cuisine recognized as a UNESCO cultural property. In addition to teaching Mexican Cuisine at Cucul Cultura Culinaria A.C. and the National University of Mexico, Carillo Arronte is also the leader of the Slow Food movement in Baja and runs the restaurants, Don Emiliano (San Jose del Cabo) and Casa Mexico (Mexico City). She lives in Mexico City.

Margarita Carrillo Arronte is a chef, author, TV host, restaurateur, and a global ambassador of Mexican cuisine. Born and raised in Mexico, she has dedicated the past 35 years to researching, studying, teaching, and cooking traditional Mexican food. Carrillo-Arronte was trained at the Culinary Institute of America, Cultura Culinaria/UNAM and is the former owner of Don Emiliano in Los Cabos, Baja, Turtux restaurant in Mexico City and La Colina in Tokyo, Japan. She is known as one of the most well respected chefs in Mexico. She has been a member of Slow Food International since 1996 and has participated 4 times in the Salone del Gusto in Torino, Italy. In 2010, She is a member of the Conservatory of the Gastronomic Culture of Mexico, the small group of professionals that campaigned to get Mexican cuisine recognized by UNESCO as Intangible Cultural Heritage of Humanity and succeeded. She was named the Mexican Ministry of Agriculture’s Chef and organized Mexican food festivals and several gala dinners around the world - such as the G-20 Summit in 2012, a cultural leader in The World Economic forum in Davos, Executive Chef of the United Nation Climate Change Conference in Can Cun 2010 as well as countless events with top dignitaries such as Hillary Clinton, Barak Obama, George W. Bush, Her Majesty Masako Crown Princess of Japan, Angela Merkel Prime Minister of Germany, Benjamin Netanyahu Prime Minister of Israel, Tamim bin Hamad Al Thani, Emir of Qatar as well as countless celebrities such as Cindy Crawford, Harrison Ford, Lance Armstrong, Rick Baileys, Massimo Bottura.

She is currently hosting the third season of her 13 Episode TV series for ElGourmet channel in Latin America, that has featured the traditions and cuisines of Oaxaca, Puebla and most recently “The Cuisine from the Stone: Metates y Molcajetes, Cocina tradicional Mexicana". She won the Lifetime Achievement Award by the American Society of Hospitality Sciences “San Pascual Bailon" (2013). And she is a member of Academie Culinaire de France. She has appeared on various broadcast outlets such as NPR’s “The Splendid Table” and Rick Bayless’ “Mexico One Plate at a Time.” She is the author of Mexico: The Cookbook (Phaidon) as well as Tamales y Atoles Mexicanos (Larousse).

She has given countless keynote speeches around traditional Mexican cuisine in places like Brazil, Peru, Japan, China, France, England, Ireland, Italy, USA, Canada, Spain, Colombia and many other countries.

She is fluent in Spanish and English. She lives in Mexico City.

This tome must weigh in at a hernia inducing 5 lbs. if it's an ounce! the graphics are splendid with a wonderfully whimsical "Dia De Los Muertos" cutout cover in lipstick pink! The recipes are within the capabilities of most good cooks, though a good Mexican cook (like my beloved abuelita) will undoubtedly fine tune the ingredients and prep procedures. Ambitious, the cookbook has a whopping 600+ recipes but as anyone who loves Mexican regional cooking knows, there are going to be omissions along the way. But it is an incredible place to begin your love affair with the multifaceted aspects of Mexican cuisine.

Excellent recipes and I love that it tells you which region the recipe is from. Some of them are very complex and take a lot of time but that is typical of many of the authentic preparations of Mexican cuisine. There are also some quick and simple recipes for when you need that. I am fortunate enough to live in an area with many hispanic markets so finding most to the ingredients is pretty simple. The book is attractive with the cover and I have given it as a gift to a couple people who have also loved it.

Great recipes and format, the book cover is inspired by Mexican art. Has mexican food recipes and ideas I haven't seen before, and I grew up in a Mexican household.

This is for Mexican cooking what the Silver Spoon (also by Phaidon Publishing) is to Italian. It is not quite as easily laid out as the Silver Spoon, and the sections are a little harder to find quickly, but this has many of my family' favorite recipes, and they are good. The cover is a little unwieldy in the kitchen so I removed the delicate laser cut dust jacket and it works fine. My cookbooks get used heavily, and very few of them have pictures so the lack of "about this dish/country" text did not bother me. I live in Texas so most of the ingredients are easy to find at a local market, and substitutions can be made for some of the more exotic leaves and grains. This is not a good cookbook if you are looking for pictures of every meal presented on delicate plates. This is also not a good cookbook if you are new to Mexican cooking (or cooking in general) and are not familiar with some of the techniques presented here. Just like in the Silver Spoon, it is just a list of recipes of different types of food and that is it. Not a travel cookbook or an about the country cookbook. Just ~500 great recipes with straightforward directions. Prep times and cooking times are usually correct, and a nice touch if you are deciding what to make for dinner.

Like I mentioned at the beginning, WOW is it organized strangely. BUT, if you are looking for good recipes for many of your favorite Mexican dishes then this book is a treasure.

I found this book to be a wonderful compendium of ideas and inspiration. So many of the complaints I've read seem to be based on needing to be spoon-fed, that is, nothing left to the imagination of the cook. I've found so many ways to combine recipes or parts of recipes here to make truly wonderful dishes. Since I volunteer at a museum bistro, cooking special Mexican lunches (once a week), I have found this volume to be endlessly valuable.

My daughter has this book. Every time I saw it, i would thumb through it and be amazed by the quality of the book yes, but more so for the plethora of recipes! The author says: "when I cook Mexican food, especially for those who are unfamiliar with the cuisine, it makes me feel very proud that the food is sophisticated, the flavours refined, ingredients fresh and nutritious." So many that are unknown!. You will be amazed by the simplicity of the ingredients and easiness of execution. It is an encyclopedia of mexican cuisine at its best!The photos are delectable! Gorgeous presentations. Margarita Carrillo Arronte first sets us the presentation of the culture, the places like: The Food of Mesoamerica. Wonderful, wonder full discovery through history and places of Mexican food. It's a winner 10o%
